How do I explain to a butcher that I want a pork butt/shoulder? In other words, what is this cut called in German? Thanks.
find the cut on wikipedia, switch to german, then print it out.

I often buy pork shoulder at Merkur Markt for my slow cooker. It’s called “Schweinsschulter”. 🙂 Makes nice shredded pork for my Mexican food recipes!
Anyone know what cut is sold as “Schoepfbraten”? I think they make great, tasty fried porkchops because of the marbling in the fat– but not sure if that cut is pan-fryable? would it be too tough?
I think the Schöpfbraten cut is like a collar steak and is best bbq-ed. Like you said, because of that marbling in the fat, etc. I have tried pan-frying but I don’t think it comes out so good – bbq is best. During the summer, that’s often what we buy to barbeque; that and the pork belly (Bauchfleisch).
